100g unsalted pistachios
100g dried cranberries
A pinch of salt
1 teaspoon vanilla extract
These simple ingredients allow you to obtain a cake with a melt-in-your-mouth texture and rich flavors.
Preparing the Batter
Cream the Butter and Sugar
In a large bowl, start by mixing the butter and sugar until you obtain a creamy consistency. This could take 3 to 5 minutes using an electric mixer.

Add the Eggs and Vanilla
Incorporate the eggs one at a time, mixing well after each addition. Then add the vanilla extract to flavor the batter.

Incorporate the Dry Ingredients
In a separate bowl, combine the flour and salt, and gradually add them to the creamy mixture.

Add the Dried Fruit
Gently fold in the pistachios and cranberries. This will give your batter a beautiful color and an irresistible flavor.

Roll out the batter onto plastic wrap, then form a compact log. Wrap it tightly and place it in the freezer for at least 2 hours.

Once the cake is frozen solid, remove it from the freezer and let it sit at room temperature for a few minutes. This will make it easier to slice. Slice the log into rounds about 1 cm thick.
