Crispy Waffles
Preparation:
1 – In a mixing bowl, pour the flour and make a well in the center.
2 – Add the sugar, vanilla sugar, salt, and a little milk.
3 – Stir in the egg yolks (set the whites aside).
4 – Mix everything together, gradually adding the remaining milk and sparkling water to avoid lumps.
5 – Add the flavorings (orange blossom water or vanilla) and the cooled, melted butter. Mix well until you have a smooth batter.
6 – In a separate bowl, beat the egg whites until stiff peaks form. (This is an alternative to baking powder to avoid a harsh taste and add lightness.)
7 – Gently fold the egg whites into the previous mixture using a spatula, lifting the batter to avoid deflating the air bubbles.
8 – Preheat your waffle iron.
9 – Pour a ladleful of batter and cook until the waffles are golden brown (the longer you cook them, the crispier they’ll be!).
10 – Serve warm as you like: sprinkled with powdered sugar, topped with Nutella, or garnished with whipped cream and fruit.
