Spelt bread with 100 g of yogurt that I bake every week!

Preparation:

First, warm the water and dissolve the yeast in it.

⚠️ Be careful: the water shouldn’t be too hot, or it will kill the yeast!

In the meantime, dust a bowl with flour.

Next, add the flour, yogurt, salt, honey, and vinegar along with the yeast-water mixture into a stand mixer with a dough hook, and knead everything for about 4 minutes.

Then place the finished dough into the prepared bowl, dust it with a bit of flour, cover, and let it rise in a warm place for at least 90 minutes.

Now place the dough on a floured work surface, fold it over several times, and shape it into a loaf.

Make a cut on top of the loaf, line a baking tray with parchment paper, and lightly dust it with flour.

Place the loaf into a cold oven on the bottom rack and set the oven to the highest temperature. Bake for 30 minutes.

Then reduce the oven temperature to 200°C (392°F) and bake for another 25–30 minutes.

It’s best to do the toothpick test to check if the bread is fully baked.
