For the Gravy & Assembly:

  • 2 tablespoons butter

  • 1 large onion, thinly sliced

  • 3 cloves garlic, minced

  • 2 tablespoons all-purpose flour

  • 2 cups chicken broth

  • 1 cup whole milk or half-and-half (for extra creaminess)

  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

  • 4-5 medium potatoes (Russet or Yukon Gold), peeled and sliced into ½-inch rounds

  • Salt and pepper, to taste

For Garnish:

  • 2 tablespoons fresh parsley, chopped
