Slow Cooker Tomato Tortellini Soup with Ground Beef

Instructions

Step 1: Brown the Beef
In a skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks.
Add the onion and sauté until softened, about 5 minutes. Stir in the garlic and cook for an additional minute.
Drain any excess grease and transfer the mixture to your slow cooker.
Step 2: Assemble the Soup Base
Add the crushed tomatoes, tomato sauce, beef broth, Italian seasoning, basil, red pepper flakes, sugar, salt, and pepper to the slow cooker.
Stir everything together.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
Step 3: Add the Tortellini and Cream
About 30 minutes before serving, stir in the cheese tortellini and heavy cream.
Cover and cook on HIGH for an additional 20–30 minutes, or until the tortellini is tender.
Step 4: Add Cheese and Serve
Stir in the Parmesan cheese until melted and combined.
Ladle the soup into bowls and garnish with fresh basil or parsley and additional Parmesan cheese.
