- 1 cup mayonnaise
- 1 cup whole milk
- 1 packet ranch seasoning mix (about 2 tablespoons)
- 2½ pounds yellow or red potatoes, cut into bite-size pieces
- 8 slices bacon, chopped
- 1 cup diced white onion
- 3 cloves garlic, minced
- 3 cups chopped rotisserie chicken
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon red pepper flakes
- 1 cup shredded smoked gouda
- 2 cups shredded cheddar cheese
- 1 teaspoon fine salt
- ½ teaspoon black pepper
- Chopped green onions or parsley, for garnish
