Roasted Sweet Potato Rounds with Honey and Feta

These Roasted Sweet Potato Rounds with  Honey and Feta are a perfect balance of sweet, savory, and tangy flavors. Roasted until tender and caramelized, the sweet potatoes are drizzled with  honey, topped with creamy feta, and finished with a sprinkle of fresh herbs. Ideal as an appetizer, side, or  snack!

Ingredients:

  • 3 large sweet potatoes
  • 3 tbsp olive oil
  • ½ tsp cinnamon
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp red pepper flakes
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp honey (regular or hot honey)
  • ⅓ cup crumbled feta cheese
  • Fresh chives or parsley, chopped
    1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
    2. Prepare the sweet potatoes: Wash and slice the sweet potatoes into ½-inch thick rounds. Place them on the prepared baking sheet and drizzle with olive oil.
    3. Season: In a small bowl, combine cinnamon, smoked paprika, cumin, coriander, red pepper flakes, salt, and pepper. Sprinkle the spice mixture evenly over the sweet potatoes, ensuring they’re well coated.
    4. Roast: Bake for 25-30 minutes, flipping halfway through, until the sweet potatoes are golden and tender.
    5. Finish: Remove from the oven, drizzle with  honey, and top with crumbled feta  cheese. Sprinkle with fresh chives or parsley.
    6. Serve: Add extra honey drizzle for added sweetness, if desired.Additional honey for drizzling
