Pineapple Cream Cheese Pound Cake

This incredibly moist and rich pound cake features a sweet, caramelized pineapple topping and a velvety cream cheese batter. The optional cream cheese filling takes it to another level of decadence.

Ingredients

For the Caramelized Pineapple Topping:

  • ½ cup packed light brown sugar

  • 1 can (20 oz) pineapple slices, drained

For the Cake Batter:

  • 1 ½ cups (3 sticks) unsalted butter, softened

  • 8 oz cream cheese, softened

  • 3 cups granulated sugar

  • 6 large eggs, at room temperature

  • 3 cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 teaspoon vanilla extract

  • ½ cup crushed pineapple, well-drained

For the Optional Cream Cheese Filling:

  • 8 oz cream cheese, softened

  • ½ cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract
