No-Bake Peanut Butter Cheesecake Bites

Instructions:

Mix the Base:

In a large bowl, beat the softened cream cheese, peanut butter, powdered sugar, and vanilla until smooth and creamy.

Stir in the graham cracker crumbs until fully combined. If using, fold in the mini chocolate chips for extra texture.

Shape the Bites:

Scoop out tablespoon-sized portions and roll into 1-inch balls. Place them on a parchment-lined baking sheet.

Chill in the refrigerator for 30 minutes to firm up.

Melt the Chocolate:

In a microwave-safe bowl, melt the chocolate chips with coconut oil (if using) in 30-second bursts, stirring between each, until smooth.

Coat & Set:

Dip each chilled cheesecake ball into the melted chocolate, coating evenly. Return to the parchment paper.

Chill again for 15-20 minutes, or until the chocolate hardens.

Serve & Enjoy!

Once set, serve these luscious bites cold. Store leftovers in the fridge for up to 5 days (if they last that long!).
