Meatloaf With A Tomato Beef Sauce

This hearty, comforting meatloaf is tender on the inside and glazed with a rich, tangy sauce. It’s the perfect centerpiece for a cozy family dinner.

Ingredients

For the Meatloaf:

  • 2 lbs ground beef (or a mix of beef and pork)

  • 1 large onion, finely chopped

  • 1 cup finely shredded carrots

  • 1 cup finely shredded celery

  • ⅔ cup old-fashioned oatmeal

  • 1 cup Italian-style breadcrumbs

  • 4 large eggs

  • 6 tablespoons ketchup

  • 2 tablespoons fresh parsley, chopped

  • 2 teaspoons salt

  • ½ teaspoon black pepper

For the Tomato-Beef Glaze:

  • 1 can (10.5 oz) beef consommé

  • ⅓ cup ketchup

  • 1 tablespoon cornstarch

  • ½ teaspoon dried basil

  • A few dashes of Frank’s RedHot or Tabasco sauce (optional)
