Instructions
-
Preheat and Cook Beef: Preheat your oven to 350°F (175°C). In a large skillet over medium-high heat, brown the ground beef with the minced garlic and onion powder until fully cooked and crumbled, about 5-7 minutes. Drain off any excess grease.
-
Assemble the Base: Transfer the cooked beef into an ungreased 9×13-inch baking dish and spread it into an even layer. Sprinkle the crumbled bacon evenly over the beef.
-
Prepare the Egg Mixture: In a large bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth and well-combined. Stir in 8 ounces (about 2 cups) of the shredded cheddar cheese.
-
Combine and Top: Pour the egg and cheese mixture evenly over the beef and bacon in the baking dish. Gently shake the dish to ensure the liquid settles throughout. Sprinkle the remaining 4 ounces of cheese on top.
-
Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the center is fully set and the top is golden brown.
-
Serve: Remove the casserole from the oven and let it cool for 5-10 minutes before slicing. This allows it to set perfectly for serving. Enjoy warm!
Chef’s Notes:
-
Bacon Prep: For easiest preparation, cook the bacon ahead of time. Baking it on a sheet pan at 400°F (200°C) for 15-20 minutes is a hands-free method for getting it perfectly crispy.
-
Customize It: Feel free to add in other low-carb favorites like diced pickles, a tablespoon of sugar-free ketchup or mustard stirred into the beef, or sliced mushrooms sautéed with the ground beef.
-
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave.
