Louisiana Seafood Gumbo
Ingredients
1 cup vegetable oil
1 cup all-purpose flour (for the roux)
1 onion, chopped
1 green bell pepper, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 (14.5-oz) can diced tomatoes
1 pound shrimp, peeled and deveined
1 pound lump crabmeat (optional but traditional)
1 pound crawfish tails (optional)
6 cups seafood stock (or chicken stock)
2 bay leaves
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon cayenne pepper (adjust to taste)
1 teaspoon black pepper
Salt, to taste
1 tablespoon Worcestershire sauce
1 tablespoon hot sauce (optional)
1 cup sliced okra (fresh or frozen; optional)
Cooked white rice, for serving
Green onions and fresh parsley, chopped (for garnish)
