Forfar Bridies (Scottish Hand Pies)

👩‍🍳 Instructions
1. Make the Pastry

In a bowl, mix flour and salt.
Rub in chilled butter until mixture resembles coarse crumbs.
Add cold water gradually until dough forms.
Shape into a ball, wrap, and chill for 30 minutes.
2. Prepare the Filling

Cook minced beef and onion in a skillet over medium heat until browned and soft.
Season with salt and pepper.
Stir in suet if using. Let cool.
3. Assemble the Bridies

Preheat oven to 375°F (190°C).
Line a baking sheet with parchment.
Divide dough and roll into circles.
Spoon filling onto one half of each circle.
4. Shape & Seal

Fold pastry over filling to form a semi-circle.
Crimp edges with a fork to seal.
Optional: Brush tops with egg wash for shine.
5. Bake

Bake for 25–30 minutes, until golden and flaky.
6. Serve Warm

Enjoy as-is or with mashed potatoes and gravy for a traditional touch.
