Hearty Italian-Style Drunken Noodles

Inspired by the bold flavors of Italy, this one-pan dish combines spicy sausage, sweet peppers, and a rich tomato-wine sauce over wide pasta. Despite the name, this is a comforting, rustic meal—perfect for a weeknight dinner.

Ingredients

For the Pasta:

  • 8 oz Pappardelle or wide fettuccine noodles

  • 1 tablespoon salt (for pasta water)

For the Sauce:

  • 2 tablespoons olive oil, divided

  • 1 lb spicy Italian sausage, casings removed

  • 1 medium yellow onion, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 3 cloves garlic, minced

  • ½ cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)

  • 1 (28 oz) can crushed tomatoes

  • 1 teaspoon Italian seasoning

  • ¼ teaspoon red pepper flakes (adjust to taste)

  • Salt and freshly ground black pepper, to taste

For Garnish:

  • ¼ cup fresh basil leaves, thinly sliced (chiffonade)

  • 3 teaspoons dried parsley flakes (or ¼ cup fresh parsley, chopped)

  • Freshly grated Parmesan cheese, for serving (optional)
