Preheat and Prep:
Preheat oven to 350°F (175°C). Grease a 9×13 inch casserole dish generously.
Sauté the Aromatics:
In a medium pot over medium heat, heat olive oil. Sauté diced onions until golden. Add minced garlic and cook until fragrant.
Craft the Roux:
Stir in flour to form a roux. Slowly whisk in chicken stock and milk until smooth and velvety, without lumps.
Embrace the Cheese:
Add sour cream and shredded cheddar cheese. Season with salt and pepper. Stir until cheese melts and sauce is creamy.
Unite and Bake:
In a large bowl, mix thawed hash browns with the cheese sauce evenly. Transfer to casserole dish and spread evenly. Top with remaining shredded cheddar cheese.
Bake for 35-40 minutes, until bubbly and golden on the edges.
