Banana Walnut Bread
PREPARATION

Prep: Preheat your oven to 175°C (350°F). Grease and line a 9×5 inch loaf pan with parchment paper.

Toast the Walnuts: Spread the walnuts on a baking sheet and toast in the preheating oven for 5-7 minutes, until fragrant. Let them cool slightly, then chop.

Mix Dry Ingredients: In a medium bowl, whisk together the whole grain flour, oatmeal, baking powder, cinnamon, and salt.

Mix Wet Ingredients: In a large bowl, whisk the honey and eggs together until smooth. Add the mashed bananas, vegetable oil, and vanilla extract. Whisk until well combined.

Combine: Add the dry ingredients to the wet ingredients. Using a spatula, gently fold the mixture together until just combined. Be careful not to overmix; a few streaks of flour are okay.

Fold in Walnuts: Gently fold in the toasted, chopped walnuts.

Bake: Pour the batter into your prepared loaf pan and smooth the top. Sprinkle with the extra walnuts for topping. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool & Glaze: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack. If desired, gently warm the extra tablespoon of honey and brush it over the top of the warm bread for a shiny glaze. Allow to cool completely before slicing.
