Apple Zucchini Bread

Instructions

Preheat & Prep Pans
Preheat oven to 350°F (175°C). Lightly grease two standard 9×5 inch loaf pans and set aside.

Mix Wet Ingredients
In a large bowl, whisk together granulated sugar, brown sugar, eggs, oil, and vanilla until light and smooth.

Combine Dry Ingredients
In a separate bowl, sift together flour, baking soda, salt, cinnamon, and nutmeg.

Combine Wet and Dry
Gradually stir dry ingredients into the wet mixture until just combined. Do not overmix.

Fold in Zucchini and Apple
Gently fold in shredded zucchini and diced apple until evenly distributed.

Fill Pans & Bake
Divide batter evenly between the two loaf pans.
Bake for 35 minutes. Then, loosely cover loaves with foil and bake an additional 20–25 minutes, or until a toothpick inserted in the center comes out clean.

Cool
Let loaves cool in the pans for 10 minutes. Then remove from pans and place on a wire rack to cool completely.
