Preheat Oven & Prep Pan:
Preheat oven to 350°F (175°C). Grease a 24-cup mini muffin tin.
Cook Apple Filling:
In a medium pan, melt butter.
Add apples, spices, brown sugar, and 3 tablespoons of water.
Cook over medium-high heat for 4–6 minutes, until apples are slightly softened.
In a small dish, combine cornstarch with 2 tablespoons of water. Stir into apple mixture.
Continue cooking 4–5 minutes until apples are tender and filling thickens. Cool.
Make Crust Mixture:
In a large bowl, combine flour, oats, and brown sugar.
Cut in cold butter with a pastry cutter until mixture looks like coarse crumbs.
Form the Cups:
Place 1 heaping tablespoon of crust mixture into each muffin cup.
Press along bottom and sides to form a cup.
Reserve remaining crust mixture for topping.
Fill & Top:
Spoon about 1 tablespoon of apple filling into each crust cup.
Sprinkle with 1 teaspoon of remaining crust mixture.
Bake:
Bake 15–20 minutes or until golden brown.
Cool in the pan for 10 minutes.
Use a knife to loosen and pop them out.
Serve:
Drizzle with caramel topping if desired. Serve warm or at room temperature.
