Fried Cabbage with Onions and Bacon

Fried cabbage doesn’t get nearly enough attention in my opinion. I remember as a kid, the smell was the one thing that kept my siblings and me from liking it. It just hung in the air, unfamiliar and a little too strong for our young noses. But as I grew older, something shifted. I learned to love that smell—because I absolutely fell in love with Southern Fried Cabbage. Especially when it includes bacon and onions.

This is one recipe from my youth that I never felt the need to change. Not one bit. And I’m luckier than my mom was: my kids don’t argue when I serve this dish. The flavor makes them happy, which makes me happy. The cabbage sautés in bacon grease along with sweet onions, soaking up all that savory, smoky goodness. It’s a side dish that could easily steal the show, and honestly? You could serve it as the main event and no one would complain.

This is one of those recipes that feels perfect just as it is. Simple, soulful, and impossible to resist.
