Mediterranean Spinach and Feta Crisps

These crispy, golden  pastries are a taste of the Mediterranean in every bite. A savory filling of spinach, herbs, and tangy feta  cheese is wrapped in delightfully flaky layers, making them a perfect appetizer,  snack, or light meal.

Ingredients

For the Filling:

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 6 cups fresh spinach (or 10 oz frozen spinach, thawed and squeezed dry)

    Feta cheese
  • ½ tsp salt

  • ¼ tsp black pepper

    Gourmet potato chips
  • ½ tsp dried oregano or dill

  • ¼ tsp nutmeg (optional, but recommended)

  • ¾ cup crumbled feta cheese

  • 1 large egg, lightly beaten

For the Pastry & Assembly:

  • Option A (Phyllo Dough): 6 sheets phyllo dough, thawed & 3 tbsp melted butter or olive oil

  • Option B (Puff Pastry): 1 sheet puff pastry, thawed & 1 egg beaten for egg wash
