Creamy Mushroom Chicken and Wild Rice Soup

This rich and comforting  soup is a complete meal in a bowl. Featuring tender chicken, an earthy blend of  mushrooms, and hearty  wild rice in a creamy, cheesy broth, it’s the ultimate comfort food for a chilly day.

Ingredients

  • 3 tablespoons butter, divided

  • 1 pound mushrooms (cremini or white), sliced

  • 1 large onion, diced

  • 2 carrots, diced

  • 2 stalks celery, diced

  • 2 cloves garlic, chopped

  • 1 teaspoon fresh thyme, chopped (or ½ tsp dried)

  • 6 cups chicken broth

  • 1 cup wild rice blend

  • 1 ½ cups cooked chicken, diced or shredded

  • 1 cup whole milk, half-and-half, or heavy cream

  • 1 cup freshly grated Parmesan cheese

  • Salt and black pepper, to taste

Optional Flavor Boosters:

  • 1 ounce dried mushrooms (porcini, shiitake)

  • 2 tablespoons white miso paste
