There’s nothing quite like coming home to the aroma of this hearty stew simmering away—tender  beef, soft potatoes, and sweet carrots in a savory, cheese-kissed  broth. Perfect for cozy nights and simple enough for any day of the week.

  • 2 lbs beef stew meat, cubed

  • 3 large potatoes, peeled and diced

  • 4 carrots, sliced

  • 1 large onion, chopped

  • 4 cloves garlic, minced

  • 4 cups beef broth

  • 2 tbsp tomato paste

  • 1 tsp dried thyme

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 cup shredded cheddar cheese

  • Fresh parsley, chopped (for garnish)
