Mexicorn and Rotel Dip

This crowd-pleasing dip is the perfect blend of sweet corn, zesty tomatoes, and creamy, cheesy goodness. It’s incredibly easy to make and always a hit at parties!

Yields: About 8 cups (Serves 16 as an appetizer)

Ingredients
2 cans (approx. 11 oz each) Mexicorn, drained

1 can (10 oz) Rotel Diced Tomatoes & Green Chilies (mild or spicy)

2 cups shredded cheddar cheese

8 spring onions (green onions), finely chopped

1/4 cup minced fresh cilantro

1 cup mayonnaise

1 cup sour cream
