Here’s a delicious and easy recipe for Cheesy Mashed Potato Puffs — perfect for using up leftover mashed potatoes or serving as a fun, savory snack or appetizer.

 


Cheesy Mashed Potato Puffs

Crispy on the outside, creamy and cheesy on the inside. These puffs are baked in a muffin pan and make a great party dish, side, or finger food.


Ingredients (Makes 12 mini puffs)

  • 2 cups mashed potatoes (leftover or freshly made)

  • 1 large egg

  • ½ cup shredded cheddar cheese (or mozzarella, Swiss, etc.)

  • ¼ cup grated Parmesan cheese

  • 2 tablespoons chopped green onions (or chives)

  • ¼ teaspoon garlic powder (optional)

  • Salt and pepper, to taste

  • Butter or oil, for greasing the muffin tin


Optional Add-ins

  • Cooked crumbled bacon

  • Finely chopped cooked broccoli

  • Jalapeños or chili flakes for spice


Instructions

1. Preheat Oven

  • Preheat oven to 400°F (200°C).

  • Lightly grease a 12-cup mini muffin tin (or use a standard muffin tin for fewer, larger puffs).

2. Mix Ingredients

  • In a large bowl, mix together the mashed potatoes, egg, cheddar, Parmesan, green onions, garlic powder (if using), salt, and pepper until well combined.
