Italian Drunken Noodles

Ingredients

For the Pasta

  • 12 oz spaghetti or fettuccine

  • 1 cup dry red or white wine (choose one you’d drink)

  • 2 cups chicken broth

  • Water (enough to cover pasta – about 4 cups total liquid)

For the Sauce

  • 1 lb Italian sausage (sweet, hot, or a mix), casings removed

  • 2 tbsp olive oil

  • 1 large onion, diced

  • 1 red bell pepper, sliced thin

  • 3 cloves garlic, minced

  • 1 cup mushrooms, sliced

  • 1 (28 oz) can crushed tomatoes

  • ½ cup heavy cream (optional, for richness)

  • 1 tsp red pepper flakes (adjust to taste)

  • 1 tsp dried oregano

  • ½ cup fresh basil, chopped

  • Salt and pepper to taste

For Garnish

  • Fresh parsley or additional basil

  • Grated Parmesan cheese
